Spinach casserole
Ingredients/Components
- pkg - 1 oz
- milk
- margarine or butter
- all-purpose flour
- dry mustard
- ground nutmeg
- garlic salt
- ground black pepper
- eggs, slightly beaten - 2 item
- bacon drippings, plus a little crumbled bacon optional
- Cook spinach in saucepan according to package directions
How to make spinach casserole:
Preheat oven to 350°. Cook spinach in saucepan according to package directions. Drain well, pressing spinach against colander to remove excess water. Return to pan; set aside. If you're using bacon drippings, add them to spinach at this point.In another saucepan, make a white sauce. Melt margarine. Stir in flour until smooth. Add milk. Stir over medium heat until sauce thickens. Set aside.
Combine nutmeg, dry mustard, garlic salt and pepper in a small cup. Add to spinach. Add white sauce and beaten eggs. Pour into a buttered quiche pan or 9-inch pie pan and bake 35 to 40 minutes or until a knife inserted in the center comes out clean. Yield: 4 to 6 servings.Variations: Saut?© 1/2 cup chopped onion in bacon drippings. Add to spinach after it has been cooked and drained.
Add 3/4 cup shredded cheese to white sauce.
Double the white sauce and add 1 1/4 cups of cooked rice.
